I checked the Tire Rack and the 19'* were expensive, but not THAT bad. Maybe the sticker shock from buying 18'* is making me less sensitive to the pricing. Looks like replicating the wheel and tire package from the concept would run about $1500 +.
Maybe so, but the 20'* will still be cheaper.
I love the grills. Looks much more high end than the black plastic ones on the production version.
And, for what it is worth, I think 20'* will handle worse than 19'* or 18'*. Much more unsprung weight, I would guess. And sidewall flex is not always a bad thing. Flex in the sidewalls allows the steering to talk to you more as the tire approaches the limits of its adhesion.
My car has 17'* on it with regular profile tires. My wife'* car has 17'* with low-pros on it. The low-pros handle way better. Also, the aftermarket 20s will weigh about the same or less than the stock because of being made out of a different material that'* lighter.

Usually, stock rims are of better quality and lighter than most aftermarket rims, unless you go to the high end stuff. Most low to mid price aftermarket wheels are actually quite heavy. You also have to be careful with tires, because their are huge weight ranges there too. I have seen differences of 8-10 lbs per tire for the same size.
Now, I don't know the weight of the GXP wheels, but the stock wheels for many Pontiacs were very light. The GP five spoke, the Bonne Cross Lace and the LSS five spoke were all in the mid to upper teens. Not many after market wheels that are close to that.
Low profile tiles CAN be better handling, but they don't need to be. Construction and compound play a bigger role, IMHO, than does the aspect ratio.

Couple things I noticed on those last pictures
1) The inside door handle bezels look like they're aluminum
2) The center brake light looks like its part of the spoiler not trunklid.

I'm thinking they were looking at aluminum trim, kinda like on the shifter, for the whole interior, but nixed it due to cost in favour of "carbon Fibre". I hate Carbon fibre on the inside of a car. Unless it is a racing Ferrari or something.

And as I keep noticing more and more stuff lol
The center tail section on the trunk lid has a reflector all the way across instead of having a a V shaped black break around the key hole

If you want to get super technical about it. The concept has 2000 tinted door lights (i'm guessing they light up, like the 2k door lights) and a 2000-01 passenger outside door handle, it has the keyhole, they stopped putting those on in '02. It has slotted rotors that are larger than stock GXP and the rear caliper is clocked higher than the stocker

Just curious to know what the differences were between the Bonneville GXP concept car, and the actual production version. I know it had 19 inch wheels on the concept. Looks like different grills too. Thought it had a Corsa exhaust
Any performance differences? Mechanical?
