I suggest you get a repair manual for you car before you start any work on it.
Basically its as follows:
Make sure the engine block is cold or drain the coolant first.
Take the two 10mm bolts off the thermostat housing.
Remove the thermostat housing
Remove the thermostat.
Clean off all the stuck on gasket from the block and the thermostat housing.
Using cotton swabs clean out the bolt holes so no coolant is left in them (will give erronous torque readings).
Use a new rubber seal on the new thermostat and put the new one in
Use a new gasket.
Replace the thermostat housing and the two 10mm bolts, torque to 11ft/lb
Replace lost coolant.
Bleed system using the bleeder on top of the thermostat housing once the engine is warm.

you can get a hypertech t-stat off of pfyc.com .. its "supposively" a performance 180t-stat... lol. I went that way and i haven't had any problems. However.. i usually go back to the 195 for winter.. maybe you should wait for spring?

Yea, the heat will take a little longer to cirulate through. Get a remote start and you wont have that problem though. I am going to leave my 180 for the winter, I have had the heat on allready, and once it eventually heats up to 'do-able' temps, it feels fine.
