Got Air, can I still drop her 2" and new PCM?

You can put on a standard suspension system from a SE and the shocks themselves will work fine. The problem is the sensor is on the control arm and will tell the pump that the shock is low on air. The pump will continuously run then. You will need to moch up the sensor so it doesn't move or remove the system entirely (fronts, rears, and pump).

I spoke with Scott a lot on the INTENSE PCM'* so I should be able to answer most your questions. The fans will kick on at a lower temp (180F) and I would personally recommend a 180 stat just as a normal maintenance duty. Colder plugs and new wires are always a good thing to shoot for. Don't worry about a high speed fan switch unless your going to be staging at the drag strip every weekend.
If you have any other questions ask away or I'll direct you to Scott. I'm ordering up my PCM this weekend and it should arrive next week (I hope) so I'll let you know about the fan situation.
