I know what you mean. I have another friend that does a lot of wood working. He saves me all the maple and alder shavings I want. Great stuff for the smoker.
I've had the chance to get my hands on some maple one time and did 3 racks of ribs. OMG were they good
Mostly get ahold of hickory and oak around here. I'm starting to like oak a little more. Nice smoky flavor without the strength of hickory
