Of yours, I'd go for the Datsun 240/260/280Z... similar cars, different motors

though 1982-1986 Celica Supra is what my heart is set on

Well, my family having owned mustangs, years ranging from 86 to 90, i voted mustang.. we really enjoy (ed) them..We once had 3 mustangs in the driveway, all registered and driven. My brother had an 83 datsun, and sold it for an 88 mustang, which he doesnt begin to regret.. i will say it will be difficult finding a solid 280zx, mustangs aren't so bad, yet you still do find your occasional rust bucket. Also, the aftermarket for the 87-93 mustangs is tremendous, but don't just limit yourself to the 93, go for 88-93..but not 87 those were air speed density cars, more power and power potential in 88-93. Another thing in the mustang world, is honestly..they are dime a dozen, you can pick them up for $3000 all day, any day. Are you wanting an lx, or gt?
