Well if you are referring to your plow truck'* fuel economy while it has the plow stuff on, it might be the increase of drag and weight that it puts on to the truck.
But you probably already know that. Are they all the same truck model with the same engines?

My car does that too all the time, when I accelerate softly off of a green light it will give one jerk and take off, I thought it might've been the low gearing doing that (at least when it isn't the 'bad' jerking that happens during cold weather, where its a bunch of jerks and the car struggles to get to 20mph)

not even close bubba is a 93 Z71 with a 383 stroker and 3.42 gears
the plow is an 86 with 4 inch lift and 15 inch tirees but it has an sm465(4 spd manual first being a creeper gear)

Well if Bubba is an automatic, that should answer your question.

two words: torque multiplication.

numerically lower FDRs don't multiply torque as much, but they lower cruise RPM with all other factors remaining the same.

otherwise, two identical cars can feel vastly different with the only cause being the engine and how worn out it is.

Whats an FDR? As well, yes, I imagine that a cars compression (which is effected by the wear on the engine) effects the pick up as well, but I'm very green with the engineering and my experience with of car engines.

FDR = final drive ratio.

I learned it has to do with the way the transmission is placed between the front tires, apparently its closer to one side of the car than the other and that causes it to jerk to the side.

Yes sarah the ''heavy'' end is on the drivers side..And my current bonne has 166k miles and the last one had 458k..Idk i dont think its running perfect it started smelling funny today and stalled on me twice

16k original miles? i always wonder why. find your issues you probably got some o2 or maf? sounds weird for a car with 16k. maybe plugged fuel filter from sitting.
