Alright... so i was doing some looking around and i think i have found what i may like...
Kicker DS60 6-1/2" Speakers Car Speakers Car Audio and Video - Sonic Electronix
Kicker DS693 6" x 9" Speakers Car Speakers Car Audio and Video - Sonic Electronix
Hifonics BXi 608 Mono Subwoofer Amps Car Amplifiers Car Audio and Video - Sonic Electronix
Kicker 05CVR122 12" Component Subwoofers Car Subwoofers Car Audio and Video - Sonic Electronix x2
and a Sonic Sub Box: 2BA12-3.0 (2ba1230) 12" Bandpass Subwoofer Enclosures Bandpass Enclosures Subwoofer Enclosures Car Audio and Video - Sonic Electronix to hold the subs..
(just to see what im pondering)

So ill have to run the amp at one ohm to supply the 2 subs with power..
is that going to be enough power? or do i need to do something different?
also with the door speakers and rear speakers.. do i need to power them differently or will they use the "stock" power supply?

well, cvr'* i believe run at 400 RMS each, and the hifonics your looking at powers 600 RMS at one ohm, you wont get as much power as your looking for but it will work. the door and rear speakers will run off the stock power supply, so youll be fine

Ok.. would it be better than to get 2 amps instead of the one? (would be different and probally cheaper modles)

uhm, not neccesarily, it would probably be cheaper to get an amp that runs somewhere around 800 watts RMS or 1600 peak. Try to find a mono d if you can you'll get more wattage from them running at one ohm. You would also have to run an extra ground, remote wire, power wire, and RCA'* so that the second amp will get the same signals as the first amp from the rca'*. In the end it is much cheaper to buy one amp with the wattage you need. the size of your box will make a difference in bass and sound quality, better to be bigger than smaller. If your planning on buying one it shouldn't be a big deal, but if your makin one then check to see how much space they are recommended to have.

uhm, i would go with hifonics, crunch, rockford or alpine. Hifonics is what i like, but its your choice really. stay away from lanzar, i have a friend whos caught on fire 5 times, no joke, and like lightning audio, cheap brands like that. the 2 channel model of my amp is nice, my friend has a brutus 2 channel that is sweet, almost any hifonics amp will do it as long as you get the right amount of wattage. Yeah theres pics of it on my car domain pages, just go to my homepage on here just click on my name on the left
