Sub/Amp Question
I want to run 2 - 12" Rockford Fosgate P212D4 totalling 1000W peak/500W RMS

The question is what amp would be suitable to run these subs, I don't want it to be under-powered. I'd also like to have a Rockford punch amp. I don't know if I am supposed to go by the RMS or Peak for the amp. Do I need a 2-channel amp because it is two subs?

yes that amp would work.
if you follow this wiring
and wire the amp so its bridged then you would be giving the subs 225 each which is fine. Underpowering subs a little wont hurt them. You may not get max output but you also wont have to worry about blowing them (assuming you set the amp correctly)
