Engine flat out dies randomly, SES comes on, but restarts
Bizarre! 2000 SSE, 118,000 miles. Engine konks outs, complete abrupt kill, SES comes on, battery light comes on, coast to the side of the road, wait, and then it restarts in a few minutes, no problem.
DIC says Check Gas Cap, but it has shown this for long time, along with Check Tire pressure (when the tire pressure is fine).
Started with random coughs, acting like air/fuel mix or fuel delivery problem, and then corrected itself, and ran happy for a long time. Recently SES came on, stayed on, Mechanic scanned it, said EVAP and Crank Sensor error. Gave it to him to work on, couldn't validate problem. Cleared the codes, replaced fuel filter, cleaned the rim of the gas tank neck, car ran fine for another 500-700 miles, mostly highway trips. Then, in the middle of a 300 mile trip, died twice in 15 miles, got it started again both times in short order, ran fine for another 250 miles.
Tonight it died as I was decelerating for stop sign. Little tougher getting it going. Went to my destination, restarted fine, drove another 25 miles but noticed headlamps dimming/flickering a bit just before I got home. Mile or two later, starting coughing, running rough, but made it into the driveway.
Fuel pressure regulator? Vacuum leak? Catalytic converter?

Since you had the code I would say crank sensor is culprit .Mine has been doing same thing with no code random stalling.Tonight it stalled and I was able to pull code p0336 crank sensor I am going to change this week now that I am sure.

The evap. error is from the purge cannister solenoid which is mounted above the rear valve cover, and this is what'* causing the check gas cap error. The random stalling is the crank sensor. My 2001 had both of these problems and is fairly easy to correct. Your mechanic should take a little more initiative to actually follow the codes.

The crank sensor is suspect, do you still have warranty?
To reset the the tire pressure low message, scroll to vehicle data on the Driver Information Center (DIC) and select tire pressure, now hold the reset button until the the display reads 'Normal'.
This is how you reset the change oil message as well.

Get your crank sensors from the dealership. The cheap part store'* crank sensors do not always work. You do not want to replace it and have the car not start at all. Been there and done that. For $5-$10 more you can have a real part.

How many miles on the car?
Is it an SE, SLE or SSEi? There'* no such thing as an SSE in a 2000+ Bonneville.
What town in northern MI do you live in? Somebody local might be able to lend a hand.

p0101 is maf sensor performance
p0121 is throttle position sensor performance
You said crank sensor
Maf sensor/ tps issues can also cause stalling

Mechanic said first set of error codes were EVAP and Crank Sensor. (I don't have the numbers). He couldn't duplicate it, and changed out the fuel filter.
Today it kept totally shutting down as I was trying to limp to the repair guy... barely made it a half mile down my road at 25 mph when it shut down the first time. Failed successively therafter while I was in town at lower speeds, stop signs, etc. Then ran okay the next 8 miles at steady speed to repair place. That'* when the P0101 code and P0121 were pulled up with scanner.
He'* planning to replace the Throttle Position sensor tomorrow.
But my sense of browsing around this site is that although the failure mode (dead stall, intermittently) is common, the solution is not, irrespective of codes, and folks have replaced several things to solve it (Crank sensor, MAF, fuel pressure regulator).
