Default Car running hot on long trip

Went up to Reno this weekend. 4 people plus bags in the car. Pulling the hill at around 75mph on cruise. The temperature gauge needle would rise about 20 degrees or so everytime the car needed to downshift to maintain speed. It wasn't that hot out or anything. Then if I backed off it would cool back down. My Grand Prix never did this. What could be wrong? T-stat issue? Air?

Also, I still get the "oil-level low" warning once in a while as well......talk about enough to scare a guy.....pulling a hill, car running hot, and then the oil level thing coming on....

since you have the intense pcm, your fans should come on at 180 or so degrees. Make sure they are running.

I don't think they are running. I already returned one PCM to Intense because it was not keeping my car at 180. It didn't seem to make any difference. It still ran at 195-205. Now my Autotap is broken so I can't check it properly. I have a drilled 180 stat. Could the stat be bad?
Is there a way besides Autotap to check if the fans are coming on correctly?

Shouldn't the turn on points be lower then that with the Intense PCM?
