Car running hot on long trip

Car running hot on long trip
Went up to Reno this weekend. 4 people plus bags in the car. Pulling the hill at around 75mph on cruise. The temperature gauge needle would rise about 20 degrees or so everytime the car needed to downshift to maintain speed. It wasn't that hot out or anything. Then if I backed off it would cool back down. My Grand Prix never did this. What could be wrong? T-stat issue? Air?
Also, I still get the "oil-level low" warning once in a while as well......talk about enough to scare a guy.....pulling a hill, car running hot, and then the oil level thing coming on....

Is there a way besides Autotap to check if the fans are coming on correctly?
