Default High running temps!!!

Ok, whenever my car is running the fans only kick on if I have the air on, or, if I have the air off, they will kick on at about 220 degrees. The thing that I am worried about though is on hot days, 80+ degrees out, the engine seems to come close to 240 degrees sometimes even with the fans at full blast and highway driving and won't cool down until I turn the car off and let it sit for a while then start it again and it is fine for some more driving then gets hot again. I had the 195 degree thermostat in there and someone on the site told me to put in the 180, but it didn't seem to help, still running hot! Any ideas? Thanks in advance!

Go through the usual diagnostics first.

How many miles are on the existing coolant? Check the condenser/radiator for clogs with dirt/junk/restrictions.
