Ok... here'* a funny thing....
Drove her into the shop today to have the problem fixed... well... wouldn't you know she was absolutely fine the whole drive in.
Reved up just fine, no issues nothing.... I left her at the shop, they are going to take her for another drive this afternoon and do some poking around to see if they can find anything.

OK... she'* back home now.
Had the fuel filter replaced (wasn't too bad, but my mechanic suggested doing it).
They took a sample of the gas and found it to be dirty and contain a bit of water. He suspects that might have been was caused my problem... bad gas. So in the end, $49 bucks later and she'* all good.
Just got to wash her, take out the electronics and carpets, fuel stabilizer and put some baking soda in her and she'll be set for the winter.
